Raw vegan pesto

If your are on the hunt for an amazing raw vegan pesto that you can put on nearly anything, you’ve in luck, cause this is it amigo. I tasted this pesto first in a semi-raw vegan restaurant in Reykjavik, called Gló. It was so good I could barely think of anything else for the next days.

I came across the recipe one day (when I was desperately googling it), I made a few tweaks, but here’s the recipe in all it’s glory.

Raw vegan pesto

Gorgeous green raw vegan pesto
Prep Time5 minutes mins
Cook Time5 minutes mins

Ingredients

  • 50 gr Basil
  • 1 handful raw pecans
  • 3/4 dl good oil
  • 1/2 clove garlic pre-chopped
  • 1 tbsp nutritional yeast
  • 1 date chopped
  • salt to taste
  • 1/2-1 tbsp lemon juice

Instructions

  • Place all ingredients in a small blender, food processor of a big pestle and mortar. Salt to taste. Keeps in the fridge in a closed container for 1-2 weeks.
