There’s hardly a better way to start your day than with a delicious, nutritious chia pudding. This version uses oatmilk so it’s both lactose free and vegan. Chia seeds are chock-full of omega-3 fatty acids, fibre, protein, iron and calcium.
It’s super quick and easy to assemble, only takes about 2-3 minutes. I suggest preparing it the night before, or at least wait one hour before the seeds have had the chance to soak up. The chia pudding keeps for 4-5 days in the fridge in a closed container.
Chia pudding with oatmilk
I use oatly ikaffe, but you can use any oatmilk
Ingredients
- 3 tbsp chia seeds
- 3/4 cup oatmilk
- 1 tsp maple syrup or other sweetener, or skip
- 1/4 tsp vanilla or cinnamon
Toppings
- 1/2 cup fresh berries
- 2 tbsp coconut flakes
Instructions
- Mix everything together ad stir. Put in a closed container into the fridge and let sit for 1 hour or overnight. Eat with toppings, or store in fridge for up to 5 days
